[ok_sign_list]- 800 g haddock or cod fillet halved lengthwise
- 1/4 cup all purpose flour
- Salt and pepper to taste
- 2 tbsp. cornstarch
- 1 cup all purpose flour
- 1 tsp. salt
- 1/2 tsp. baking powder
- 3/4 cup dark beer (e.g. Guinness)
- Juice from 1 lime
- 1/3 cup Beaurivage very dark maple syrup
STEPS
- Preheat a deep fryer to 375 °F.
- In a bowl, mix the cornstarch, flour, salt and baking powder.
- Stir in the maple syrup, lime juice and dark beer, and whisk until a uniform texture is obtained.
- Refrigerate.
- Season the fish with salt and pepper, and dredge it with flour.
- Shake the fish pieces to remove excess flour.
- Dip each piece in the batter, coating them well.
- Fry the fish and shake the basket to prevent the pieces from sticking at the bottom.
- Fry for about five minutes or until the pieces are golden brown and crispy.
- Remove the fish and let strain on cooling rack or paper towel.
- Serve immediately with French fries, green beans and lime wedge.
