Fish and Chips in Dark Beer and Maple Syrup batter

  • 800 g haddock or cod fillet halved lengthwise
  • 1/4 cup all purpose flour
  • Salt and pepper to taste
  • 2 tbsp. cornstarch
  • 1 cup all purpose flour
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 cup dark beer (e.g. Guinness)
  • Juice from 1 lime
  • 1/3 cup Beaurivage very dark maple syrup

STEPS
  1. Preheat a deep fryer to 375 °F.
  2. In a bowl, mix the cornstarch, flour, salt and baking powder.
  3. Stir in the maple syrup, lime juice and dark beer, and whisk until a uniform texture is obtained.
  4. Refrigerate.
  5. Season the fish with salt and pepper, and dredge it with flour.
  6. Shake the fish pieces to remove excess flour.
  7. Dip each piece in the batter, coating them well.
  8. Fry the fish and shake the basket to prevent the pieces from sticking at the bottom.
  9. Fry for about five minutes or until the pieces are golden brown and crispy.
  10. Remove the fish and let strain on cooling rack or paper towel.
  11. Serve immediately with French fries, green beans and lime wedge.
